Last Thursday was Mad Science Night at Wildman’s elementary school. The PTO asked for bake sale contributions from each class. Several families from Wildman’s class, including ours, signed up. I wasn’t sure what I was making until the night before though!
I ended up putting together these sweet (both literally and figuratively) peanut butter and jelly sandwich cookies. Wildman insisted that we buy one at the event. he wanted to try one for himself because I made sure he kept his paws off the bake sale cookies that sat temptingly on the counter at home! Peanut butter and jelly sandwiches are Wildman’s most favorite lunch choice so I knew he’d love these.
Here’s the recipe:
Peanut Butter and Jelly Sandwich Cookies
- Package of Betty Crocker Peanut Butter Cookie Mix
- 1/2 a tub of vanilla or white icing
- 2 tbsp. peanut butter
- 4 tbsp. preserves or jelly (I used strawberry preserves)
Prepare and bake cookies according to the package. I had just enough dough to make 24 cookies. Mix peanut butter with icing in a small bowl. When cookies are cool, spread the bottom of one with the icing mixture and one with the preserves or jelly. Sandwich the two cookies together and enjoy!

I wish I had pictures from Mad Science night to share with you but I left my camera at home accidentally. It was a huge community event. I loved how many families came to check it out. There was pizza, soda and baked goods for sale. A DJ was hired to play all sorts of fun party and Halloween music. The principal dressed up in her best alien witch costume. Many of the classrooms were open to teacher hosted science experiments. The cafeteria had hover craft rides and crazy noise balloons. It really was awesome!
