Here are a few things that are making me happy right now.
Gerbera daises in my kitchen window. Such a happy color. Such a happy flower.
A basket of Christmas ornaments waiting to find a home on our naked tree. We collect a few special ones each year. As I fill the basket I relive all the wonderful memories that are associated with each ornament.
Peanut butter fudge and Christmas decorations!
A little boy who loves to entertain himself with blocks.
Our neighbor’s pineapple salsa recipe! He brought the recipe over last weekend. I’m looking forward to making it for Wildman’s upcoming Super Mario Bros. party at our house.
Pineapple Salsa
- 1 medium red onion, diced
- 1 red pepper, diced
- 1 yellow or orange pepper, diced
- 1-2 fresh jalapenos, diced
- 1 1/2 – 2 fresh pineapples- DO NOT USED CANNED PINEAPPLE!
- fresh cilantro to taste (Pick leaves from stems. Tedious but you don’t get stems in the mix.)
- 2-3 limes
Mix all ingredients well. Cut limes in half and squeeze juice all over the mix.
Optional Ingredients:
Mango- taste firs to make sure it is ripe and sweet
Spice- some type of blackening, jerk or similar. Our neighbor recommends Paul Prudhomme’s Blackened Redfish Magic.
Also making me happy is the wonderful news that Bethany finally had her baby girl! Welcome baby Elliora!
