Waffle Saturday!

Guess who got a new double waffle iron for Christmas?!  Yahoo!  I love waffles almost as much as Donkey from Shrek.  J had been paying attention when I raved about the Hampton Inn waffle makers each time we’ve stayed at one of their hotels.  Now I have my very own!

I got up on Saturday morning thinking about how good waffles would be for breakfast and decided to finally take my new toy out of its box.

The boys and I whipped up this quick batter that made six big waffles:

Waffle Batter

2 eggs

2 c. of all-purpose flour

1 3/4 c. milk

1/2 c. vegetable oil

1 tbsp sugar

4 tsp baking powder

1/4 tsp salt

1/2 tsp vanilla

Preheat waffle iron.  Beat eggs until fluffy.  Add the rest of the ingredients and mix until smooth.  Spray the waffle iron with cooking spray.  I used the measuring cup that came with the waffle iron to scoop and pour each waffle.  Cook until golden brown (or until the time went off, in my case).  Enjoy!

Wildman had blueberry syrup on his and Cutie Pie opted for my favorite- straight up, pure maple syrup!  Mmmm!  The whole family gave two thumbs up!

Yummy Goodness

J and I sought out blueberry pancakes for breakfast on our first morning in Maine.  There was a lovely restaurant called Marriner’s in downtown Camden that advertised them on a wooden sign out front.  I saw the sign on our mad dash from the airport in Portland to the rehearsal dinner the night before and took note for future reference.  I’m so glad I did because those pancakes were bursting with wild Maine blueberry goodness.  We ordered them with real maple syrup too.  Heaven!

On a related blueberry note, the bride and groom gave us a cute canvas tote loaded with all sorts of wonderful things upon our arrival.  Two of the treats were Mlesna blueberry tea bags from Sri Lanka and a little jar of blueberry honey.  I made myself a cup of tea yesterday evening and sweetened it with the honey.  Wow!  The flavor was amazing!  It was so rich and flavorful that I drank it right down.  I’m definitely ordering a box of that tea.

Teacher Appreciation

In honor of teacher appreciation week, Wildman and I signed up to bring his teacher breakfast this morning.  I got the boys up early and we headed to Starbucks for Mrs. Lacy’s venti sweet tea and chocolate chip banana bread.  We had breakfast there too.  The boys each got a slice of lemon pound cake and a kids hot chocolate.  They sat at the bar looking so cute.

I also worked with our class mom on a gift from the children.  We decided to make a shadow box with all of the students’ initials in it.  We wanted something that wasn’t over-the-top teacher-y because Mrs. Lacy is retiring this year and will not have a classroom to display the gift in anymore.  The shadow box ended up being understated and kind of abstract.  Something she could possibly hang in her home.  Also, I found the cutest owl gift wrap at World Market to wrap it in!

Wildman and I also spoiled her with this cute flower arrangement.  Mrs. Lacy really is a tremendous teacher!  I’m very sad that Cutie Pie won’t get the opportunity to be in her class.  The elementary school just won’t be the same without her.

In other news, the children are hosting a Mother’s Day Tea at Wildman’s school on Thursday afternoon.  Mothers only was on the invitation 🙂  Luckily, my mother-in-law is available to watch Cutie Pie.  Wildman has a couple of lines to learn for the program that he’s doing with his class.

I cannot wait for Thursday!  Isn’t the classroom Mother’s Day bulletin board adorable?  I couldn’t resist taking a photo of it this morning.
