Behold! My first ever sweet potato pie!
It tasted so good with Cool Whip on it. It’s very similar to pumpkin pie and I do love me some pumpkin pie. If you do not like sweet potatoes or pumpkin pie then this recipe is not for you. If you don’t care for sweet potatoes but do enjoy pumpkin pie, like me, then I suggest you try it!!!
Here’s my mother-in-law’s recipe that I used:
Sweet Potato Pie
1 cup brown sugar 2 eggs
1 tsp ground cinnamon 1 2/3 cups evaporated milk
¼ tsp ground cloves 1 1/2 cups cooked sweet potatoes
¼ tsp ground nutmeg
¼ tsp salt
Preheat oven to 425 degrees. Combine the sugar, cinnamon, cloves, nutmeg and salt. Beat eggs with the milk and combine with the sugar mixture and the sweet potatoes until smooth. Heat in a sauce pan until almost boiling and pour into an unbaked pie crust ( I used a homemade graham cracker crust).
Bake 15 minutes. Reduce temp to 350 degrees and continue baking for 15 – 20 minutes or until a knife comes out clean. Serve topped with whipped cream.

I still have 5 sweet potatoes left.
I’d given my mother-in-law a few because she likes to bake them for lunch. I used 4 in this recipe and I still have 5 left!!! I think I’m going to try my hand at sweet potato fries next…
